Pure Fuel Recipe: DIY Fruit on the Bottom Yogurt

With a good mix of protein and carbohydrate, yogurt is a great way to refuel and built muscle after Pure Barre. Unfortunately, most store bought flavored yogurts have more than a tablespoon of added sugar. Fruit on the bottom yogurt is an especially big culprit. Making your own is surprisingly simple. Make a batch and store individual servings in small mason jars for a grab and go snack.

Makes 6

  • 2 cups frozen fruit
  • Juice of ½ lemon
  • 3 cups plain, organic Greek yogurt
  • 2 teaspoons vanilla extract
  • ½ cup chopped nuts, toasted
  • Honey (optional)

In a small pot, heat the fruit and lemon juice over medium heat. Smash the fruit with the back of a wooden spoon to release the liquids. Cook 10-15 minutes until thickened.

Mix the yogurt and vanilla extract together.

When cool, divide the fruit mixture between 6 mason jars. Top with ½ cup of yogurt each and garnish with chopped nuts. Refrigerate until ready to eat. Serve with a teaspoon of honey drizzled over the top if desired.
