Pure Fuel Recipes: Sweet Potato Crust Quiche

More and more people are going gluten free, which can be a good thing. However, with that switch, many people end up eating more refined grains from processed, gluten free foods, which contributes to weight gain and causes energy-depleting spikes in blood sugar. Instead, choose high fiber, gluten free carbs like oats, almond flour, brown rice or sweet potatoes, as in this gluten free quiche. With plenty of protein from the eggs and cheese and healthy carbs from the potato, this is a perfect, post Pure Barre muscle builder. (Recipe adapted from Sprouted Kitchen).

Serves 6


  • 8 eggs, preferably organic
  • ½ cup dairy of choice
  • ½ teaspoon cumin
  • 1 ½ tablespoons coconut oil
  • 2 small sweet potatoes, thinly sliced into rounds with a mandolin
  • 2 green onions, thinly sliced
  • 6 ounce bag baby spinach
  • 1/3 cup crumbled goat cheese
  • Chopped cilantro, for garnish
  • Hot sauce, for garnish

Place the oven rack in the upper third of the oven and preheat to 425 degrees.

In a large bowl, whisk together the eggs, milk and cumin. Season with salt and pepper.

Heat the coconut oil in a large, oven proof skillet with sides on medium-high heat. Cook, flipping occasionally, until tender, golden, and a little bit crispy, about 10 minutes. Sprinkle the green onions over the potatoes, then top with the spinach. Cover with a lid or a cookie sheet and let spinach wilt about 1-2 minutes.

Reduce heat to medium. Pour the eggs over the top. Cook until mostly set around the edges, about 5-7 minutes. Sprinkle the goat cheese over the top. Place the quiche in the oven and finish cooking for about 5 minutes.

Remove from oven and let sit about 5-10 minutes to cool. When ready to serve, garnish with hot sauce and cilantro and cut into 6 slices.
