These cauliflower fritters taste just like potato cakes! Serve with a side salad for a light lunch or dinner, or as a side dish. Feel free to add different spices and even cheese to the cauliflower mix. A little feta or sharp cheddar works great. You could even top these with a fried egg for a tasty brunch.
Makes 12 medium fritters, enough to serve 4.
- 1 head cauliflower, stemmed and chopped into florets
- 1/3-1/2 cup whole wheat flour or gluten free flour of choice
- 3 scallions, chopped
- 1 egg
- 1 ½ teaspoons spice mix of choice
- 2 tablespoons extra-virgin olive oil or coconut oil
Steam the cauliflower until fork tender, about 8 minutes. Place in a large bowl and let cool slightly.
When slightly cooled, add flour, scallions, egg and spice mix. Season with salt and pepper.
Heat olive oil in a large skillet on medium-high heat. Scoop up cauliflower mix using a ¼ sized measure and form into balls. Drop into the hot oil and press down to flatten with the back of a spatula. Your pan should fit about 5 fritters at a time. After about 5 minutes, flip and cook the other side another 5 minutes. Complete with the remaining cauliflower.
