Banana Chocolate Chip Muffins - Jasmine Norris

I found this amazing recipe online and I love it! It’s oil free, gluten free, and easy to make.

Recipe inspired by the Feel Good Foodie. 

Ingredients:

  • 2 cups gluten free rolled oats
  • 1 cup greek yogurt
  • 2 ripe bananas
  • 2 eggs
  • 1/4 cup honey
  • 1 1/2 t. baking powder
  • 1/2 t. baking soda
  • 1/2 cup mini chocolate chips

Directions:

  1. Preheat your oven to 375°F.
  2. Mix wet ingredients separate from dry ingredients.
  3. Mix all ingredients except for chocolate chips in food processor until batter is smooth.
  4. Add chocolate chips and stir.
  5. Transfer better into a muffin pan using parchment paper muffin liners and sprinkle more chocolate chips on top for fun!
  6. Bake for about 25-30 minutes until the tops of muffins are set.
