Wherever your adventure takes you this summer, whether it’s out on the open road or 35,000 feet in the air, save your wallet and your waistline from the empty calorie and overly-processed “convenience” foods along the way and pack yourself a little taste of summertime with these energizing little balls of sunshine. Slightly tart and naturally sweet, these strawberry lemonade bites will satisfy your cravings and keep hunger at bay wherever your adventure takes you.

Lemon: Also chock full of vitamin C, lemons offer protection against free radicals that cause sun damage but their antioxidant properties span beyond their pretty skin benefits. Lemons have been shown to boost metabolism and aid in weight loss when the peel is also consumed. Let’s hear it for the zest!

Dates: An all-natural, energizing and fiber-filled fruit, dried medjool dates are vitamin and mineral rich and lend a sweet caramel flavor to this recipe you can feel good about enjoying.

Coconut: The new “It” food on the block due to its numerous health benefits, coconut really amps up the flavor, texture and visual appeal in this recipe. Not only does pretty food taste better, but coconut also adds protein, belly-filling fiber, blood-building iron and zinc for pretty skin.

Camu camu: This superfood is optional but adds a delicious zing that really brings out the lemonade flavor in the bites. Camu camu offers the highest amount of vitamin C per serving than any other known fruit making it a potent superfood for skin health, immunity and detox. Strawberry Lemonade Superfood Bites

{makes 12 bites}Pure Fuel: Strawberry Lemonade Bites - Pure Barre Blog

  • 2/3 cup almonds
  • 1/3 cup cashews
  • 3/4 cup medjool dates, pitted
  • 2/3 cup freeze dried strawberries
  • 1 lemon, zest and juice
  • 1/3 cup unsweetened shredded coconut
  • 1/3 cup camu camu (in the superfood section of Whole Foods, sometimes Earth Fare and where I usually buy all of mine for the best price, Amazon.com)
  • pinch of sea salt

Directions:

  1.  Soak the pitted medjool dates in hot water for about 10 minutes or until softened.
  2. Add almonds, cashews and 1/3 cup of freeze dried strawberries to food processor. Pulse until nuts and strawberries are sand-like in texture {avoid pulsing too long as the mixture can turn into pink nut butter!}.
  3. Add the dates, juice of one lemon, zest of 1/2 lemon and pinch of sea salt. Reserve the other 1/2 of zest for topping.
  4. Pulse until the dates are finely chopped and mixture becomes incorporated and dough-like.
  5. Taste mixture. If more “zing” is needed, add in a little more lemon juice until desired taste is achieved.
  6. Shape the mixture into small balls by rolling between your palms.
  7. Process reserved 1/3 cup freeze dried strawberries until sand-like in texture.
  8. Place processed dried strawberries, coconut shreds and camu camu powder onto 3 different plates to serve as toppings.
  9. Roll some of the balls in the dried strawberries, some in coconut shreds and the rest in camu camu powder to fully coat the outside.
  10. Take reserved zest from 1/2 of the lemon and sprinkle on top of your bites. Store in an airtight container. Happy travels!
