Pure Fuel: Pure Energy Overnight Oats

Overnight oats are my ultimate favorite thing to eat when I come home after a workout.  Actually, overnight oats might be the only reason I actually enjoy breakfasts during a busy week.  I’m not sure I would ever go back to eating oatmeal the “regular” way.  It would just be too much trouble to get everything out in the morning and heat it up. But hey…before I get ahead of myself, I’ll let you try it for yourself!  All it takes is a mason jar and just a few ingredients.  Give it a lil’ shake, shake shake and refrigerate.

My recipe happens to be filled with a certain superfood called Spirulina that makes them a vibrant green color.

Green Goddess, Spirulina. 

Spirulina is what gives these oats the name ENERGY. Pure energy, that is. Spirulina is a powder that comes from a blue-green algae that grows in high alkaline water sources. It can be found in health food stores and it comes in tablets, powder, flakes, and capsules. It has a chocolatey-seaweed flavor.  It can be used in smoothies, juice, and my favorite is in these overnight oats. Spirulina is incredibly high in protein and is a good source of antioxidants and B-vitamins.

The distinct flavor works well with the oats and is not too overwhelming. Spirulina works well in this quick, easy meal. If you are new to using spirulina, start with a half teaspoon in your oats and work your way up to a full teaspoon. I love topping the oats with extra goji berries, cacao nibs and bananas.

Pure Energy Overnight Oats 

Serves 1


  • 1 Mason Jar
  • 1/2 cup oats
  • 2/3 cup almond or coconut milk
  • 1 teaspoon goji berries
  • 1 teaspoon cacao nibs
  • 1/2 teaspoon chia seeds
  • 1/2-1 teaspoon spirulina
  • 1 teaspoon unsweetened, shredded coconut
  • 1 teaspoon pure maple syrup or raw honey

Optional Toppings: Goji berries, Cacao nibs, Unsweetened shredded coconut, Chopped bananas.


  1. Combine all ingredients (besides toppings) in a mason jar
  2. Shake the Mason jar to mix the ingredients
  3. Transfer to the refrigerator overnight,
  4. E the next day with added toppings

Note: These overnight oats can be stored in the refrigerator for up to 3 days.
