Packed with high fiber, unprocessed carbs, oatmeal is a great breakfast option before morning Pure. Instant oatmeal is quick and convenient, but the whopping tablespoon of added sugar will cause you to crash about halfway through. This recipe for oatmeal gets flavor from creamy coconut milk and by toasting the oats before cooking. It’s delicious sweetened with just a teaspoon of honey or pure maple syrup. To squeeze in a serving of antioxidant-rich berries, top it with a quick blueberry-chia jam. Simply blend 1 cup of frozen berries with 1 tablespoon chia seeds and let it sit to gel for a few minutes.
This recipe makes 6-8 servings and stores well in the refrigerator.
- 1 tablespoon coconut oil
- 3 cups rolled oats
- 2 cans coconut milk
- 1 ½ teaspoons vanilla
- Large pinch of salt
Heat coconut oil in a large pot on medium heat. When melted, add oats and cook, stirring every few minutes, until they smell toasty. Add coconut milk with enough water to make 6 cups, vanilla and salt. Bring to a boil, reduce heat and simmer about 10 minutes until thickened. If refrigerating, stop cooking when the oats are still slightly liquid, as it will continue to soak up in the fridge.
Serve garnished with nuts, honey, pure maple syrup, jam or stir in a little plant based protein powder if desired.
